1.1 A Puffing Puri

Drop a flat circle of rolled dough into hot oil and something almost magical happens: in a few seconds it balloons into a puffed, golden puri. Slide a phulka onto an open flame and it swells the same way.
Now look closely at a finished puri and you will notice something curious — one side is thinner than the other. Why? Why does it puff at all? Why does it sometimes refuse to?
These are not exam questions. They are invitations. A scientist looking at a puri asks exactly these questions — and so can you. This whole chapter grows out of that one puffing puri.
You do not need a laboratory full of glassware to do science. Your kitchen is a laboratory. So is a puddle after rain, a moth at a bulb, or a cup of tea cooling on a table. Science begins the moment you stop taking something for granted and ask, “Why does that happen — and what would happen if I changed it?”
In Grade 6 you learned that science begins with wonder — simple “Why?” and “How?” questions. In Grade 7 you saw that science evolves — every answer opens new questions. This year, in Grade 8, the two come together as investigation: we will not just collect new facts, we will learn how to find them ourselves.
Science Talk Think of one everyday thing you have always taken for granted — ice cubes floating, a fan cooling you, milk turning into curd. Say out loud the very first “Why?” or “What if?” question it makes you ask. Notice that you did not need any special equipment to ask it — only attention.
